Agave nectar

1 tsp

Lime juice

1/2 oz

Orange flower water

Splash

Instructions

Run a lime wedge around the outside of the rim of the glass then roll the rim in salt. Add all the ingredients with ice to a cocktail shaker. Shake & strain over fresh cubes of ice into a tumbler. With a peeler cut an orange twist. Garnish with a lime wheel and add your layer of desired heat!

Your job is to return things to how they were. The work of the best washer-upper-er may be invisible, but it is no less useful. Surely, there is no nicer alone than being alone in the company of others. Hearing, over the sound of running water, a distant conversation which you, thank god, need not contribute to. And then there is the immediate satisfaction that comes from cleaning dirty plates. First, they are dirty, and suddenly, you have made them clean. If only the same instant success could be applied to your day job. No, there is nothing better than this noble task—and, equally, nothing worse than the inevitable and disappointing appearance of a polite tea-towel-bearing guest who has come to help dry up.

Grapefruit juice

¾ oz

Celery syrup

½ oz.

Garnish with celery leaves

Instructions

For the celery syrup, add equal parts celery juice to ½ tsp superfine organic sugar.

They do seem to have an appetite for independence. Meanwhile, it’s best not to lose your temper with wet sheets when they inevitably reach toward dust or dirt or refuse to hang evenly on the line. Forgive the shirt that will not relinquish its stains. The underpants that take flight next door. Could there be a lovelier loneliness than a day spent in the company of drying clothes?

Ingredients

Aplós Calme or Arise

Lime juice

¾ oz

Lavender syrup

½ oz

Cucumber slices

Instructions

Combine ½ cup water and ½ cup sugar in a saucepan. Bring to a boil over high heat, stirring until sugar dissolves. Remove from heat. Add 1 tablespoon of dried culinary lavender and steep for 12 minutes. Pour through a fine wire-mesh strainer into a bowl; discard solids. Cool completely for about 10 minutes.


With a muddler, mash cucumber in the bottom of a cocktail shaker. Add Aplós and ½ oz of the lavender simple syrup. Shake and strain into a high ball. Add soda water and stir. Garnish with a cucumber slice or fresh wild lavender, if desired.

Instructions

In a shaker, combine Aplós Calme, lychee juice, ginger juice, lemon juice, and ice. Shake and strain into a coupe or martini glass. Garnish with a fresh lychee and rosemary sprig.
