Zest of 2 limes
Thinly sliced mint leaves
Add sugar and water to a saucepan and put on medium-high heat until the sugar dissolves. Remove and cool. In a bowl, add mixture, fresh lime juice, and Aplós. Stir, cover, and refrigerate for 4 hours.
Once chilled, add lime zest and thinly sliced mint leaves. Pour into the ice cream machine and mix according to manufacturer instructions. Transfer the mixture to a container and freeze overnight. Garnish with fresh mint, caviar limes, and zest.
